Where to buy probiotic drinks in Bangkok

Bangkok has more fermented drinks than ever, from supermarket shelves to café fridges. Here is how to choose a probiotic drink that is still alive.

Look in the fridge, not on the shelf

Live cultures need cold. A raw probiotic drink is kept refrigerated from the brewery to your hand, so the chiller is the first place to look. Drinks sold warm on a shelf for months have usually been pasteurised or heavily filtered, which means the cultures are no longer alive.

Read the label

Look for words like raw, unpasteurised, live cultures or naturally fermented. A short best-before date is a good sign rather than a bad one: living drinks keep changing, so honest producers ask you to enjoy them within a couple of weeks.

Check the sugar too. Fermentation eats sugar, so a properly fermented drink should taste bright and tangy, not syrupy. Ours have about 4.8 g of sugar per bottle.

Know your ferments

Kombucha is fermented tea with clean, gentle acidity. Ginger bug sodas are fruit and herb sodas fermented with a ginger starter. Tepache is a tropical pineapple ferment. Water kefir and fermented milk drinks are other popular probiotic styles. Each has its own flavour, so it is worth trying a few.

Buying fresh in Bangkok

The freshest probiotic drinks come straight from small local breweries, delivered cold. That way the bottle spends days, not months, between fermenting tank and fridge.
